Recipes/Sausage Risotto

Ingredients - Sausage:
- 30ml (2 tbsp) veggie oil
- 500g ground chicken
- 2.5ml (1/2 tsp) salt
- 5ml (1 tsp) ground coriander
- 2.5ml (1/2 tsp) garlic powder
- 2.5ml (1/2 tsp) mustard powder
- 2.5ml (1/2 tsp) ground fennel seed
Ingredients - Risotto:
- 30ml (2 tbsp) veggie oil - Sausage mix (see above) - 1 medium onion, finely diced - 1.5 cup arborio rice - ~4 cups chicken broth - 1 tbsp + 1 tsp nutritional yeast - 1 package dried mushrooms (~15g) - 2 cups frozen peas
Instructions
combine the sausage ingredients in a bowl and stir until unified.
set instant pot to saute, and add oil, onions and sausage mix and cook until the sausage is browned
add the remaining ingredients (excluding the peas) and stir until anything stuck to the bottom of the pan is released.
Add lid, seal, set for 6 minutes high pressure
let pressure release naturally for 5 minutes, and the release the rest.
Stir in the peas and let sit for a minute to warm up.
add Parmesan or other toppings is desired and serve.
Note that it will take about 25 minutes in total once you start the instant pot in pressure cooker mode.
